Vegan Chocolate Hummus

Ingredients:

Directions:

  1. Add all ingredients, but the chocolate chips & salt to a food processor and blend well.
  2. Next add 1/3 cup chips and sprinkle of salt to mixture and stir.
  3. Add to serving dish and sprinkle with remaining salt and chips.
  4. Place in refrigerator for 10 - 15 minutes.
  5. Remove and serve with your desired sides. We suggest organic peaches, vegan pretzels, carrots and strawberries. Enjoy!

Paleo Chocolate Chili

Paleo Chocolate Chili

Ingredients:

  • 2 tbsp Olive or Avocado Oil
  • 1 medium Onion, chopped
  • 2 tsp Oregano
  • 2 tsp Coriander
  • 3 tsp Cumin
  • 5 tsp Chili Powder
  • 3 cloves Garlic, minced
  • 1 pound Grass-Feed Ground Beef
  • 1 pound Nitrate Free Ground Pork
  • 1 tsp Salt, or to taste
  • 1 tsp Black Pepper, or to taste
  • 2 Bay Leaves
  • 1 28 oz can Organic Diced Tomatoes
  • 1 16 oz can Organic Crushed Tomatoes
  • 1 bar Pascha Dark Chocolate, chopped (We used our 70% Cacao Organic Vegan Dark Chocolate Bar with Arabica Coffee)
  • 1 tsp Balsamic Vinegar

Directions:

  1. Heat oil in a large saucepan with onions over medium heat for about 5 minutes until onions are golden in color.
  2. Mix all spices together in a bowl and add to onions and oil. Mix well.
  3. Add garlic next and mix.
  4. Break up your meat and add to the pot.
  5. Season meat with salt and pepper. Add Bay Leaves.
  6. Mix until meat is browned.
  7. Add tomatoes to the mixture and stir.
  8. Simmer pot over low heat for 2 hours. Mixing every 30 minutes.
  9. Add chocolate when done cooking and mix well.
  10. Right before serving add balsamic and stir.
  11. Add more chocolate to top if desired before serving. Enjoy!

White Chocolate Strawberry Holiday Tree

Ingredients:

Equipment:

  • Foam Cone
  • Toothpicks
  • Plastic Wrap

Directions:

  1. Wrap the foam cone in plastic wrap.
  2. Wash the strawberries and dry them.
  3. Put larger strawberries to the side to use along the bottom row of the cone.
  4. Melt chocolate using a double boiler over medium low heat. Once chocolate starts to melt stir until melted.
  5. Put strawberries on toothpick, dip into the melted chocolate, trying to shake off the excess, and set on parchment paper until set. We used about 7 dipped berries in our tree. You can decide what works best for you.
  6. Dip strawberries again and this time apply sprinkles and glitter before they set. Let set again on parchment paper.
  7. Start to put toothpicks in the foam cone and add strawberries going in a circle from top to bottom saving the larger berries to place along the bottom.
  8. Add chocolate covered strawberries intermittently to add a festive touch.
  9. Once tree is covered with berries start adding mint leaves.
  10. Take strawberry out where you want the leave and place mint leaf on toothpick and reapply berry. Enjoy!

Pro Tips: Placing the toothpicks in the cone first and then adding strawberries works best. Larger strawberries along the bottom work best. Sprinkle with white monk fruit for a snow effect.

Winter Wonderland Cake featuring the Ultimate Sweet Potato Frosting

The holidays can be indulgent at times but your cake frosting doesn't have to be. Make this Winter Wonderland Cake with healthier sweet potato frosting today!

 

Important tips to remember

Make sure that your cake layers are completely cool to room temperature before frosting them. If you frost them while they're still warm, the frosting will not stay in place and become difficult to work with. Another thing to keep in mind, after blending together all your ingredients for the frosting, set it aside  for a few moments to allow it some time to thicken up. Also note that frosting should be blended until smooth and creamy.

Ingredients

Sweet Potato Frosting:

  • 1 cup mashed sweet potato (about 1 medium potato)
  • 1 cup canned coconut milk 
  • 1 cup PASCHA Chocolate Chips, melted (we used 85%)

Christmas Tree Cake:

  • 1 recipe chocolate sweet potato icing 
  • 3 layers 8" chocolate cake 
  • Waffle Cones
  • Green icing 
  • Icing sugar 

Directions:

  • Poke holes in your sweet potato with a fork and wrap in aluminum foil. Cook in the oven at 350F for about an hour, or until soft. Set aside to cool. 
  • Melt PASCHA Chocolate until smooth. Place your mashed sweet potato, melted PASCHA Chocolate, and canned coconut milk in a blender or food processor. Blend until creamy. Set aside to thicken slightly.
  • Bake your chocolate cake layers as desired. Allow cooling before icing. 
  • Ice your cake using your sweet potato icing. 
  • Using a cutting board, cut waffle cones to various sizes. Place onto the side and top of the cake. 
  • Pipe stars onto the cones using green icing. When all cones are fully covered, dust with icing sugar to resemble snow. ENJOY!

Vegan Whiskey Infused Chocolate Coffee Nama Truffles

Ingredients:

Directions

  1. Line a 8x8 pan with parchment paper and set aside.
  2. Add chopped up chocolate bars and vegan butter to a bowl, set aside.
  3. Heat whipping cream over low heat stirring occasionally.
  4. Add hot whipping cream to the chocolate & butter mixture stirring until combined.
  5. Add whiskey if desired. Stir well.
  6. Add mixture to the lined pan and sprinkle the top with sea salt.
  7. Tap to even out and place in the refrigerator for 6 hours or up to overnight.
  8. Remove from refrigerator and cut into squares.
  9. Sprinkle with cocoa powder and serve. Enjoy!

Pro Tip: In between cuts of the Nama dip knife into hot water to help facilitate even cutting.
